I have some stuff to do. Have to go out and get the grocery shopping done — need to get started on the baking and have to have the goods for it! Try to pick up the final gifts that need to be mailed out… and run some library books (I have about 70 checked out, no lie — they were for my Children’s literature class). Anyways, before I head out I thought I would do my duties as a blogring member — ha ha ha ha — an let you all know about the upcoming writing challenge for the Kween_of_Queens blogring:

Make it long, ormake it short, make it REAL! No fiction this time, alright? Whatmade it so wonderful? What was special about your holiday?
Also someone wondered about the recipe for Fresh Apple Cake so I thought I’d post that as well.

4 cups peeled cubed apples
2 cups sugar

1 cup coarsely chopped pecans
3 cups flour
1//2 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla
2 tsp baking soda
2 eggs
1 cup of vegetable oil
Let diced apples stand in sugar for at least 1 hour, stirring ofte to get liquid
Preheat oven to 350 degrees.
Add well beaten eggs, oil and vanilla to apple mixture
Sift flour, soda, nutmeg and cinnamon, add to mixture and stir by hand till thouroughly mixed
Grease and flour tube or bundt pan
Bake 1 hour at 350. Let cool 10 minutes and turn out of pan.
**great served warm with butter or ice cream, or drizzled with an icing glaze**
We love Apple cake, it’s kind of bread like, not real sweet and make a great breakfast!

I hope your errands were eventful:):):). I like cake that has raspberry filling and a good buttercream frosting. YUMMMMM. Wow that’s a lot of books. Bet you will be glad to get those back to the library. :sunny:

Normally I’m a fan of anything, really…anything, chocolate, lol, but not to long ago my friend made something called “Pig Pickin Cake,” seriously! Cant tell she’s southern huh? Anyway, it’s so delicious! It’s my new favorite! It’s made with yellow cake mix, whip cream, pineapples, and mandarin oranges. OMG, my mouth is watering just thinking about it!
mmm that cake does sound good! I love really any kind of cake they are all good!
